Best Low Carb Keto Bacon and Egg Pie

I had been missing a slice of good old bacon and egg pie for a while, last night with nothing specific purchased to make dinner I decided it’s time.


I don’t like the Keto base recipes, I have tried several different ones; they are just not for me. While I could have made it without a base at all (I make yummy quiches without a base) for a bacon and egg pie, a base helps hold it together and adds a nice bit of texture.


So instead here I have used a single go low carb wrap as the base, while a whole wrap at 11.4g carbs is high for many not doing OMAD, this pie makes 3 (or 4) servings, so only adds 3 to 4g carbs to the meal, which works for me, the rest of the ingredients are low carb or limited in quality, i.e. one cherry tomato per serving.


And the result is a bacon and egg pie as good as any I have ever had! I am looking forward to having another slice for lunch tomorrow!


Ingredients:


  • One Low Carb Wrap (The ones I use are 11.4g carbs each and are as close to a non-carb wrap as I have found)

  • (Optional) one small "pickling onion" chopped very small.

  • 10 eggs

  • Bacon, enough to cover the complete top

  • a couple of hands full of your favourite grated cheddar style cheese

  • (Optional) A few cherry tomatoes, chopped in half

  • (Optional) A few slices of Habanero (I used pickled)

  • Salt and pepper


TIP: Slightly brown of the wrap, both side on a hot pan, this will dry it out a bit and improve the final texture


Method:


Place the wrap in the bottom of a baking pan. It should be just large enough to fit the wrap. It is ok if the wrap is slightly raised at the edges.


  1. Sprinkle the chopped onion (Optional)

  2. Crack the eggs onto, make sure the yoks are arranged evenly

  3. Add plenty of salt and pepper.

  4. Completely cover with a single layer of sliced bacon.

  5. Sprinkle over a 3/4 of the cheese, leaving about half a handful

  6. Add tomatoes and Habanero (Both optional)

  7. A little more salt and pepper over the tomatoes


Bake at 180c 360f for about 30 minutes, it is ready when the middle is firm when pressed and the top on nicely browned.


Makes 3 or 4 slices.
